When I arrived, the groves were already buzzing with activity. The timing of the harvest is absolutely critical; getting the olives at that precise, fleeting moment of perfect ripeness is a delicate dance between nature and human expertise. Miss it, and the oil's character changes. Hit it just right, and you capture that vibrant, fresh essence we all adore.
I joined the teams in the groves, and I can honestly say, it’s some of the hardest work I’ve ever witnessed. The Jaén sun is relentless, beating down on the ancient, gnarled trees. The land here isn't flat; we're talking steep gradients that make every step a focused effort. And the sheer dedication of the team, meticulously gathering the best fruit by hand from these challenging slopes, is truly humbling. This isn't just farming; it's an intense, physical commitment to quality, performed under conditions that truly test endurance. Every strained muscle, every bead of sweat, is a testament to the passion poured into each olive.
